Simple Vegan Biscuit Recipe

This simple vegan biscuit recipe is one we keep coming back to! I’m a bit of a biscuit fiend, I really enjoy a biscuit with my coffee. We tend to make our own biscuits as it produces less plastic waste. Plus, there’s nothing better than a home baked biscuit, and all the wonderful smells they create in the kitchen while they’re baking!

We started experimenting with vegan recipes during the first lockdown. We have a few favourite vegan recipes, including vegan peppermint creams. But we discovered that vegan biscuits were extremely easy to make, and tasty too. The recipe is super quick and easy to make. The biscuits are perfect for an after school treat or to have with your coffee. The biscuits are similar to shortbread, but using coconut sugar makes them a golden brown colour. The orange zest gives a wonderful aroma and a subtle citrus flavour.

Simple Vegan Biscuit Recipe

This recipe has just four ingredients, and take less than 10 minutes to make!

What you’ll need:

250g Self-Raising Flour

125ml Olive Oil

75g Coconut Sugar (we used Organic Coconut sugar from Coconut Merchant)

Zest – 1 x Orange

Mixing bowl, spatula (optional) Baking Paper, baking tin, cooling rack.

(Optional to decorate: 100g Dark Chocolate, small amount of orange zest)

Pre-heat the oven to 180c. Line your baking tray with baking paper. Zest the orange. Mix flour and coconut sugar together then add the olive oil and orange zest. We mix the ingredients with a spatula, but you could use a spoon – or even mix it with hands if you prefer! Once it has become a dough, put it into your tray and flatten it out. Bake for 20 minutes. When you get them out, you’ll notice the mix is still soft, don’t panic! It will harden up as it cools. Score your slices while it is still soft. Leave it in the tray for a further 10 minutes, before you move it onto a cooling rack.

We sometimes dip ours into dark chocolate, and sprinkled them with a little remaining orang zest, but this is just to make them extra decadent!
