Double Chocolate Cookies – Easy Recipe!

As it’s #NationalBakingWeek, I thought I’d share one of our favourite recipes, I enjoy baking, but I’m really not very good at it, so if you’re looking for a simple recipe, look no further! Double Chocolate Cookies are a favourite in our house, but the nearest shop which sell them is twenty minutes away, so we decided to have a go at making our own and after a bit of experimenting, we’ve created a recipe which all of us love! They’re seriously tasty, and really easy to make!

Home Made Double Chocolate Cookies

What you’ll need:

4oz Stork (or butter)

3oz Golden Caster Sugar

1 Egg Yolk

4 oz Plain Flour

1 oz Cocoa Powder

1oz Porridge Oats.

25g White chocolate – cut into small chunks

Baking Tray either lightly greased or covered in baking paper.

Preheat fan oven to 170c.

Mix the butter and sugar together until it’s a smooth paste, then add the rest of the ingredients. You’ll quickly have your cookie dough! if you’re making these for children, you’ll get about 16 small cookies, or 8 large grown up sized cookies. We didn’t use a cookie cutter, instead we rolled a small amount of dough into a ball and then squashed it between our hands – an easy method if you’re letting the children help!  Make sure you don’t put the cookies too close together on the tray so they don’t stick together. Then pop them into the oven for 15 minutes.

When you get them out of the oven, leave them a minute or two on the tray to cool before trying to move them to a wire rack. They smell heavenly and the boys are always desperately bouncing about waiting for the cookies to cool – they are worth the wait! These are really indulgent, and I’m not sure we can go back to shop bought cookies ever again! Store them in a sealed tin once cool!
